There are a few guns which are already available which could be used in a WW1 scenario, they vary in quality and price.
DBoys K98 (springer or gas) Could pass for the Gew98. Bit of a dog regarding accuracy and those damn ejecting shells, but in a trench scenario with maybe a 20m range plus the shooter would more than likely be static so finding the shells would be easier even if they fell in the mud.
Tanaka K98 (gas) Excellent gun but pricey.
WE Luger (gas) Fairly affordable and reliable, plus the longer barreled versions would be a hoot with a shoulder stock.
Marushin Mauser Broomhandle (gas) Not too pricey and fairly reliable
MP001 (springer) The humble VSR clone, accuracy is a bit dubious but this gun would be my first choice if I made a ww1 impression. Surprisingly there were quite a few sporting rifles taken to France by British officers which is what the MP001 looks like. Little things like adding a dummy mag in front of the trigger guard and/or wrapping the front end with hessian will help it to look more period.

He still does make them. Although I wouldn't buy them from him right now with all the trouble he is getting on the WWIIAA Forum.

Hey you guys forgot 2ndBatt, he is making the Springfield M1903. I have one and 2 K98's. Granted the K98's are WWII, they could be fitted with the WWI stock. But 2ndBatt could make both rifles for us.

An idea that was used during the war. A burlap sack was tied around the gun so when the shells ejected they were collected in the sack. Some sargent with nothing better to do but complain about all the shells messing up his trench.LOL
